Willow Creek, "The Spirit of Paso," sources locally farmed and sourced ingredients for its hand-crafted top-quality spirits, so this special dinner promises to be a memorable one for distilled alcoholic beverage lovers.

Four-Course Willow Creek Distillery Dinner at Pequín Coastal Cocina. Wednesday, May 3, starting at 6 p.m.

Executive Chef Alex Aviles at Pequín Coastal Cocina and the whiskey experts at Willow Creek Distillery in Paso Robles have designed a unique, gourmet Four-Course Dinner paired with top-notch spirits. Amuse-Bouche includes Oyster with cucumber granita and smoked wasabi kewpie paired with Apricot Brandy and Vietnamese Thit Kho with fig brandy-braised pork belly paired with Fig Brandy. The First Course is Apple and Pear Salad composed of pickled strawberry, poached apricot, celery and tarragon served with Pear Brandy. Second Course serves Hen Ballantine with chamomile, farce and pistachio accompanied by Chamomile Liqueur, and the Third is Smoked Filet with pickled cherries, morello cherry demi-glace and paired with Straight Bourbon. An Intermezzo of Honeydew Dill Sorbet and a coral tuille comes next with Grappa. Then the Fourth Course delights with a Muddy Waters Chocolate Coffee Torte, Amaro caramel and "nutty behavior" candied walnuts paired with a Mudslide.

Pequín Coastal Cocina's Executive Chef Alex Aviles and his culinary crew have chosen some of their menu favorites to create a special Mother's Day Brunch for all the special women who support, dote on, care for and guide their families. This lovely oceanfront dining experience will feature selections highlighted by ingredients and include Avocado Eggs Benedict, Roasted Prime Rib, delectable Shrimp and Grits, colorful Seasonal Salads and more. Of course, Sweets that all mothers will love will enhance this relaxing celebration.
